Thanks to a second fermentation in the bottle for at least 18 months and a manual “remuage,” a fine and persistent foam is obtained. Goccia d’Oro sparkling wine is distinguished by a straw-yellow color and floral aromas, hints of bread crust and pastries. The taste is fresh, fruity and well structured. We harvest Erbaluce grapes before they are fully ripe in order to provide the optimal acidity for a good sparkling wine.
